Low carb naan Yesterday we came up with a recipe for mini pizza crust in the microwave! This gave us an idea and the experiment continued! The end result? A totally and insanely good low-carb naan, that is so easily made that it almost makes itself. We never use recipes when we make garlic butter, but If you require one, this one is good.  Do not despair if you don’t own a microwave oven, you can pre bake them in the oven, as described in the recipe! I’ll probably bake a whole load of these later to freeze (without the last steps, we’ll add garlic butter and spices when re heated to we get the fresh feel). Easy Low carb Naan!
 
This recipe calls for fat reduced sesame flour. You substitute this with 30 g more almond flour. We do however highly recommend the sesame flour, also in other low carb recipes, because of it's unique taste, texture and baking properties.

Ingredienser:
  • 1 egg
  • 50 g shredded cheese
  • 1 tsp apple cider vinegar
  • 1 tbs (about 20 g) sour cream
  • 30 g almond flour
  • 20 g fat reduced sesame flour (see link in main text)
  • 1 tsp baking powder
  • 1 tsp powdered physillum husk
  • 1 - 2 tsp Sukrin Gold (or other sweetener of choice)
  • Pinch of salt
  • 1 tbs garlic butter (for topping)
  • Drizzle of coriander (for topping - optional)
Fremgangsmåte:
  1. Preheat oven to 220°C/430°F grill program (or 180°C/340°F over and under heat if you are not using microwave to make the pre-bake the naans.)
  2. Add cheese, apple cider vinegar, sour cream and eggs in a food processor or similar. Pulse until smooth.
  3. Add sesame flour, almond flour, baking powder, physillum and sweetener and mix well - (Remember to scrape the bowl so that everything is evenly mixed).
  4. Divide the dough into two or three and do following to each portion:
  5. Cut a parchment to fit on the glass plate in your microwave.
  6. Put some oil on your hands and shape the bread directly on the parchment paper.
  7. Put in the microwave at full effect for 90 seconds. (If you do not use a microwave oven, fry them on the middle rack for about 10 minutes - then turn the temperature up to 220°C/430°F grill program).
  8. Melt garlic butter in the microwave for about 30 seconds and brush on bread. Sprinkle on some coriander or other herbs if desired.
  9. Put the naans on a baking tray and bake for 2-5 minutes at the top rack of the oven. (Keep a close eye, they can easily burn).
