Super soft Vanilla & Strawberry Cookies in the microwave!

Ingredienser:
- 25 g (0.9 oz) butter
- 25 g (0.9 oz) cream cheese
- 1 egg
- 50 g (1.75 oz) almond flour
- 20 g (0.7 oz) coconut flour
- 30 g (1.0 oz) brown sugar substitute (1:1)
- ½ tsp vanilla extract or 5 drops vanilla essence
- 1 tsp baking powder
- pinch of salt
- 2 - 3 strawberries (frozen works fine)
Fremgangsmåte:
- Melt the butter in the microwave - it takes about 30 seconds.
- Add cream cheese to the melted butter and microwave for 10 more seconds.
- Whip together. It will look a bit like cottage cheese but it will smooth out once you whisk the egg in.
- Beat the egg and vanilla extract in the butter mixture until you get a smooth batter.
- Add the dry ingredients and mix well.
- Cut the strawberries into small cubes (cutting frozen strawberries is easy, just watch your fingers), and then fold into batter.
- Cut parchement paper to fit the glass plate in the microwave.
- make 4 equal "dots" of batter and spread them out a little to biscuit size (think digestive). IMPORTANT: No less than 4 in the micro at the same time, otherwise they burn easily!
- Put the parchement paper on the glass plate and bake at 800W for 90 seconds. Keep a close eye!
- Repeat and let the cookies cool on a rack. The longer they are allowed to cool - the crispier they get.
